It's time for Holiday baking and what could be better than a healthy cookie recipe to get you through? I made these cookies last weekend, after trying a different recipe first (which ended up as dog treats). They have a muffin texture, in the shape of a cookie and are quite delicious! The frosting recipe took some tweaking, but turned out very good as well!
Banana-Oat Chocolate Chip Cookies
3 Ripe Bananas, mashed
1 teaspoon pure vanilla extract
1/2 Cup Natural Peanut Butter
2 Tbsp Coconut Oil, melted
2 Cups Quick Cooking Oats
1/4 Cup Flour (your choice, I used quinoa flour)
2 Tbsp ground flax seed (I didn't use)
1 teaspoon baking powder
1/2 Cup Sweetener (Agave, Honey or Brown Sugar)
1 Cup Chocolate Chips
Mix wet ingredients and dry ingredients separate. Slowly add dry ingredients. Set oven to 350 degrees and bake for 10-15 minutes, until golden brown.
2 Tbsp Chocolate Protein Powder
1 teaspoon peanut butter
1 Tbsp Agave
1 teaspoon vanilla
Add almond milk until you get desired consistency
You may tweak ingredient amounts to desired taste.
