Starts with Breakfast!

Hello Everyone!  Have you missed me?!  Summer is slowing down and it's time to get back on track with this thing called a healthy lifestyle.  And it all starts with breakfast!

Here are my top 3 favorite breakfast dishes this summer:

1.  Mesa Sunrise Organics Cereal
-quinoa blend/gluten free
-add honey on top
-use organic plain soy milk 
-can buy at Hyvee
-very nutritious, tasty, high protein, high fiber

2.  Veggie Scramble
-use olive oil, chopped onions and peppers
-fry veggies for about 5 minutes on medium heat
-add 2-3 eggs, flavor with sea salt, garlic, pepper
-high protein, high fiber, high antioxidants
-can buy pre-cut onions and peppers at Hyvee

3.  Homemade Granola atop Greek Yogurt
-Plain greek yogurt, with a natural flavor you add on top would be best, such as honey or agave nectar
-High in fiber, protein, calcium, vitamin E
-Make a big batch of granola and keep in a jar  
-Recipe follows:

Homemade Granola 

6 c organic oats/1 TBSP cinnamon1/4 c milled flaxseed (optional)1/4 c chia seeds (optional)
Mix the above ingredients together.
Combine the following and add to the dry ingredients:
1/2 c extra virgin olive oil or unrefined coconut oil1/2 c water1/2 c pure maple syrup or raw honey1 tsp pure vanilla 1/4-1/2 c all natural peanut butter 
Bake at 325 degrees. Toss every 10 minutes for a total of 30 minutes or until desired crunchiness. 
You can let the  mixture sit for a few hours so the oats can soak which helps reduce the phytic acid in the grain, which will help with GAS ;)

I love making homemade granola and keeping it around for a snack!  You can just add milk on top of it and eat it like cereal as well!
