Superfood Recipe and Breakdown

Raw Super Food Chocolate Truffle

     I love this recipe for the super food truffles!  Although, I made up my own name for them, "Super Balls", so call them what you want but I guarantee if you love chocolate, you will love these!  AND they are good for you.  A perfect little treat to calm your sweet tooth or chocolate cravings.  Here you go:

Prep Time: 5 minutes 

Yields: 12 Truffles

Ingredients: 1/3 cup peanut butter
             1/4 cup unsweetened cacao powder or carob powder
             1 tsp maca powder (optional)
             1 tbsp of goji berries
             1 tbsp sunflower seeds
             2 tsp shredded coconut
             2 tbsp of honey (or brown rice syrup, agave nectar)

Directions: 1.  Mix peanut butter, cacao powder and sweetener (honey).
            2.  Add goji berries and sunflower seeds
            3.  Make one tsp size ball and cover with shredded coconut
            4.  Spray Pam on tin foil, place balls on foil, freeze until firm and serve.

Benefits of Ingredients:

Peanut Butter- has a high level of monounsaturated fat, resveratrol, vitamins b3 & E, magnesium, folate, fiber, arginine, p-coumaric acid.

Unsweetened Cacao Powder- contains high levels of flavonoids, especially epicatechin (benefits cardiovascular system).  May benefit LDL cholesterol levels and blood pressure with long term use.

Maca Powder- contains significant amounts of natural iodine.  

Goji Berries-11 essential and 22 trace dietary minerals, 18 amino acids, 6 essential vitamins, 5 unsaturated fatty acids (including linoleic acid and alpha-linolenic acid), beta-sitosterol and other phytosterols, 5 carotenoids (including beta-carotene , lutein, lycopene, zeaxinthin) and numerous phenolic pigments associated with antioxidant properties.

Sunflower Seeds- contains linoleic acid, fiber, amino acids, vitamin E and B and many minerals.

Coconut- contains lauric acid, capric acid and caprylic acid.  Has properties of antimicrobial, antioxidant, antifungal and antibacterial.  Contains vitamin E and K and minerals such as iron.  Contains poly phenols and fatty acids such as oleic acid and linoleic acid.  

Honey- contains trace amounts of vitamins and minerals, as well as compounds thought to act as antioxidants such as chrysin, pinobanksin, Vitamin C, catalase and pinocembrin.  Raw honey from local manufacturers may reduce allergy symptoms.  Has antibacterial and antimicrobial properties.
